I made this lunch so long ago, I don't remember what I put in the sandwich! But those are small fingerling potatoes - just boil them, just barely covered in water with some salt and seasoning... about 20 minutes later, the water is evaporated and the potatoes are delish! The little green things are edamame.
Small burrito left over from mexican take-out dinner tastes just as good for lunch!

A deli fave - bagel with cream cheese and lox, some apricots and dried plums (and you know they aren't fooling anyone cuz we know these are really prunes) cherries, grapes, strawberries, and 2 olives.
Baked chicken tomatoes, crackers and cheese, nuts and raisins, cucumbers with a little salt.
